
Catfish Soup

You might want something to go with those hush puppies (previous post)...
2 to 3 pounds catfish, cut up
2 quarts cold water
1 sliced onion (Vidalia, if you can get it)
1 chopped celery stalk
Salt and pepper
Herbs (bay leaf, parsley, thyme)
1 cup milk
2 tablespoons butter or fat
Place all ingredients into stew pan and put on slow fire. stir occasionally and cook until fish is ready to fall to pieces. Serve hot.
